JEM'S HOME MADE SPECIAL BAGOONG!

Filipinos are known for our various flavors and toppings. The majority of us couldn't eat without the utilization of sauces. Among our renowned toppings are soy sauce, fish sauce, vinegar, ketchup and of course BAGOONG!

Well, lets talk about the many uses of our well-known bagoong and how it is made. Bagoong or Shrimp paste in English is a mixture of fermented small shrimps (called alamang). Bagoong is known for its strong smell especially when fermented longer. It is called Bagoong Guisado when the fermented small shrimps were sautéed with garlic, onion, tomato, and pork. This can be considered either as a dish or as a toppings. .

The process of cooking are not easy as I witnessed how it was done. After buying the uncooked Bagoong Alamang in the market, making sure that the cleaning process are well done, cooking it personally gives us assurance that we will experience the homemade uniqueness of its taste…right sweet-salty with a little spiciness plus the added flavor of bits of crunchy pork , such a delight and self-satisfying in our appetite!

I love it with Indian Mangoes!

Try it with steamed kangkong or pechay as an appetizer ala Chowking!

Do not also miss using bagoong as condiment when eating fried fish. It suits well.

Mixing bagoong with steamed eggplant, tomatoes and onions is also very delicious…Ensalada panalo!

Binagoongang baboy without bagoong is not binagoongan definitely.

Pinakbet is a mixture of different vegetable and bagoong.
